BLUEBERRY COBBLER

Spring decided to grant us a weekend of 90 degree weather and copious amounts of Sunshine pretty early into March. Normally, when the weather gets like this, I refuse to run my oven. I made an exception on Sunday for blueberry cobbler. This summer dessert couldn't be easier due to the fact it is only 5 ingredients and essentially one of those recipes you literally just throw in a dish. Topped with cold vanilla ice cream, this summer time staple will have you thinking of all the other possibilities you could dazzle your guests with.

GRANDMA TATUM'S BUTTER SUGAR COOKIES

 Every Christmas growing up, we would dedicate a day of our winter break to baking and decorating sugar cookies. It was probably our favorite day of the year, next to Christmas alone. Mom would whip up a batch of dough, and each of us would roll and cut out the shapes we wanted. As soon as they came out of the oven, we would slather the stars, trees, and bells in thick butter cream frosting and pounds of sprinkles. My Mom tells the story of my sister and I around the ages of three & four making cookies. She said the floor was crunchy with sprinkles and our faces covered in frosting. When my Dad came home from work that night, we ran to him, all sugared up and sticky. He said something witty about us tasting delicious and scooped us up in his arms. Lucky for me, I married into a family with a strong tradition of sugar cookie baking & decorating as well. Both Grandma Tatum (my Mom's mother) and Great Grandma Lila (Derek's mothers grandma) have an almost identical recipe for sugar cookies. It's just another way to have a taste of Christmas wherever we may be.

PUMPKIN PIE

For all the time I spend in the kitchen cooking, I am a very timid baker. With cooking, I am free to add ingredients as I choose to taste, and the restriction of strict measuring has always made me shy away from baking. This year, I wanted to step out of my comfort zone this holiday season and whip up some pies for Thanksgiving. With the help of my friend Amy, (a seasoned baker and pie connoisseur) we spent a Wednesday night baking, eating, and binge movie watching "The Hunger Games" and "Catching Fire". To say we are thrilled for "Mockingjay" is the understatement of the year. We topped the pie with fresh whipped cream, and even though it melted a little on the hot pie, it sunk down through the pumpkin for a velvety richness all the way to the crust. With pie in hand and movies on the screen, the night couldn't have been more perfect. Well, if Peeta had baked the pie himself, that would be a totally different story.

INDIAN SUMMER TURKEY CHILI

Growing up, and now living in Southern California, gives you a skewed idea on weather and seasons. Normally, May and June are some of our cooler months, leaving us with high temperatures and hot days long into September and October. I never remember a year growing up when we actually bought jeans/pants to wear back to school. This strange weather phenomenon has come to be known, “Indian Summer”; where our Fall becomes more of a deep autumnal summer of endless warmth and sunshine. This chili, much like the weather, is a perfect world of warm days that can be spent at the beach, and cool foggy nights snuggled under blankets by the fire. No wonder I have always loved these months so much!

25TH BIRTHDAY CHALLENGE: ONE YEAR LATER

Last year for my 25th birthday, I made a list of goals I wanted to accomplish within the year. I had a wonderful year and loved having these goals to keep me occupied and to challenge myself. Although not every goal was accomplished, I learned so much about myself in the days I spent exercising, exploring San Diego, and trying to fulfill myself in both mental and spiritual ways. So, let's check in and see how I did... I'm pretty darn proud of myself! Oh, and cheers to 26! Let's see what this year has in store for me!
  • send a hand written note to someone once a week
    • I actually did pretty good with this task! Not all of them were handwritten, but I tried to text, call, FB message, e-mail, someone every week with just a fun memory I had about them, or just to see how they were doing. It was really fun, and I hope to continue with this! 
  • participate & journal a 3-5 day juice fast/cleanse
    • So, this did not happen. I am planning to do a cleanse in December of this year though after the holidays. 
  • take an overnight trip somewhere in Southern California
    • Does Carlsbad (ahem-- my parents house) count? We could NOT justify spending money on a hotel to get away when our own bed is right here in the city near everything. We did discover a lot of San Diego this past year, and you can see some of our favorite places on this list.
  • read the Book of Mormon 3 times 
    • I'm really sad about this one, but I only read it once. I need to be better about reading my scriptures on a more regular basis. I am going to start a new rule-- I cannot read my book until I read my scriptures! We will see how this goes and if I am a more dedicated personal scripture reader.
  • eat & journal a list of favorite local San Diego restaurants 
  • host a dinner party once a month
    • This is another success! Whether it was with friends, family, parties, or as simple as hosting the missionaries, I was able to accomplish this goal. But, really? I can think of ANY and EVERY excuse in the book to host a party! 
  • complete & journal 5 exercise "challenges" 
    • This was one of my favorite goals to accomplish! I participated in two Jillian Michael's exercise programs (30 Day Shred & Cardio Crush). I started stretching again every night, and have noticed some flexibility come back from my years of dancing. I also did home yoga for a couple of weeks and really loved that. I still do some of the moves in my nightly stretches. And, my most accomplished was running and finishing my first 10K in July!
  • practice new photography/Photoshop techniques
    • I don't know if I really improved, but I can see a difference in my photos from the past year. I'm gonna chalk this one up as a success!
  • bake a pie from scratch 
    • I am hoping to accomplish this goal sometime this Fall. I am dying to bake a pie, but this summer has been too hot for the oven, and I just lost track of time!
  • attend the temple once a month
    • We were pretty good with this one as well. It might not have been every month, but it was every 4-6 weeks or so we got a temple date in.

COCONUT ALMOND GRANOLA

Last Fall, after living here in San Diego a couple months, my friend Lela introduced me to her family favorite coconut granola. Ever since my first taste, I have been making up a batch every two weeks or so for Derek and I to crunch on. I like to use Lela’s recipe as a base, and then add as much or as little extras to my batch.  A couple Christmases ago, I made a yummy cinnamon cranberry granola for gifts, and it was a major hit. Using that as inspiration as well, this recipe for coconut almond granola came to be. This recipe is not exact, as I very rarely measure, but the mixture of sweet coconut and spicy cinnamon and nutmeg give this granola such a wonderful flavor. The added crunch of almonds, walnuts, pumpkin seeds, and caramelized cranberry turns this into a breakfast staple. Paired with Greek yogurt, berries, and a drizzle of honey, this delicious granola parfait has become a go-to in our house. So, turn those ovens back on (it’s September after all!) and pull out the spices that remind you of all things wonderful and get baking!

BBQ CHICKEN PIZZA

Years ago, my Dad (an amazing BBQ master) perfected the art of making pizza on the grill. He has taught a slew of church ladies, youth, and countless others the secrets of the best BBQ pizza. When Derek and I were newly married, and enduring hot summers in Arizona, this was one of our weekend favorites in the summer. It involves little prep, a lot of fresh produce, and only a couple quick minutes near a hot BBQ (rather then baking it in the oven!). Recently, this pizza and a big salad has become a Friday night favorite as we wind down from a busy week to enjoy dinner and a long list of favorite recorded cable TV shows. Whether entertaining a crowd with mini versions, or simply having a family pizza night, this recipe is sure to knock your socks off and keep your house cool, while enjoying a delicious homemade pizza.

THE PARABLE OF THE FINISH LINE

I hadn’t been on a school bus since my last fieldtrip while teaching in Arizona. It was cool Idaho morning with a slight breeze, with that smell in the air that reminded me of my first day of college. As we drove along the dirt roads of Oakley, passing adorable homes, barns, and acres of farmland, my stomach started to knot. This was it. This was the day I had been training for. This was the day I was set to accomplish my goal of running my first 10K. As we turned the final corner, my confidence sank. The described “hill” on the race map and by fellow runners on the bus was in fact a large, steep, rocky mountain. As we climbed, I could almost feel my lungs collapsing in, and my training along the beach in San Diego was going to do me no good compared to this thick, dry, mountain air.

There it was-- the starting line. As we anticipated the gun shoot to clear us to run, I sadly told myself, “There is no way. You have to walk this mountain. This race is now a 6.2 mile walk.” Seconds later, the gunshot went off and I was left in a trail of dust. I slowly began my up-hill climb with a few other participants. My watch quickly started beeping at me, alerting me that I was working above my heart rate level for so early in the race. I wanted to throw it off the side of the cliff. Of course I am working harder! I can hardly breathe, it’s hot, and I’m walking up a dirty and rocky mountain. I placed my hands on my hips as I slowly and defeatedly walked. After walking the slowest, hardest, and hottest mile, I looked up and saw it. There they were—Derek’s sweet aunt Tanette and sister Whitney. I thought, “Why aren’t they running ahead? They totally can and should!” They had turned around and were cheering, “You can do it! Come on!” It was right then I knew, I could get my confidence back. You see, they had run this race before. They knew the course; the rocky roads, the downward back switch, the long and straight flat road along a corn field.
From then on, the race became easier; I had a faster stride in my walks and runs because I had two people cheering and helping me along the way. We soon made it to the asphalt paved road and with ease, ran through town. When we turned the corner to the last straightaway to the finish line, we looked at each other and said, “Let’s run!” Soon enough, we heard cheering, clapping, and knew we were almost there. We were hot, tired, sore, and ready for our hot breakfast waiting for us in the park. Once we were closer, we saw all of our family at the finish line—they were waiting to welcome us across with congratulations. When we reached the line, we jumped for joy! We had done it! I had done it! The hugs, cheering, and love we got was so immense. These people had waited for us at this line. They knew we would make it. They cheered and yelled and hoorayed when we finished. They were proud.
This past Sunday, we had a lesson in church on trials. This scripture, in Doctrine & Covenants 100:12 reads, “Therefore, continue your journey and let your hearts rejoice; for behold, and lo, I am with you even unto the end.” Life, much like my race, is a journey. At times, we will have hills and mountains to climb. Other times, we might be easily coasting on the smoothly paved road. No matter where we are on our journey, there will always be those we look to when it starts to get hard. There will be those who may have had a similar experience before, or those who are just there for you, cheering you on with a smile and warm hug. The thing to remember is that finish line—we will always get there. We will get there through these people. We will get there through the confidence and determination we have in ourselves. We will get there through the help of our Savior, who will never leave us alone. When our trials come to the point of the finish line, we will look back on our journey; full of rocky mountains and hills, dusty and dirty roads, and the hot, hot sun and think “I did it. I made it. I crossed this finish line”. Oh what a feeling that is—when the race is over, and we are finishers.

MASON JAR BERRY CHEESECAKE

I think it's safe to say I am slightly obsessed with using mason jars in my everyday life. Pen and pencil caddy on my desk, a vase for fresh flowers, drinking from them at dinner parties, and for the first time, using them in a new favorite no bake treat for this past weekend. These mason jar berry cheesecakes are perfect for entertaining, which is exactly what I used them for. A festive summer dinner party was the books for Sunday night and these did not disappoint. With our A/C motor burning out on us, and my strict policy of not using the oven in the summer, I needed something quick and cool to whip up for our guests. These berry cheesecakes were the final product, and they were delicious. Served along side extra berries and almonds, these received high praise in both taste, and the cuteness factor. I mean, seriously, how do you not love something that comes in it's own little jar?

VIRGIN SANGRIA

There is nothing more refreshing then mixing up a fun and colorful "mock-tail" to enjoy on warm summer nights. Whenever we head into Old Town for dinner, I am always slightly jealous of the people who are ordering all the pretty drinks from the bar. The other night, I bit the bullet and ordered a virgin drink and man, had I been missing out! It was a special treat to enjoy, but also sparked my interest in how I could make it myself. This virgin sangria hits the spot with it's freshly squeezed citrus juice and cranberry/grape mixture. It's so simple, and makes a big impact when entertaining guests, or just sipping solo on the patio with some roasted mixed nuts. Don't forget to add in the sparkling water for a nice fizz & fancy finish to the fresh citrus of the summer!

BRUSCHETTA

Hardly anything makes me more giddy and excited when it comes to food then to eat then to treat my taste buds to a fresh and delicious helping of bruchetta. As a child, we would go to Italian restaurants and my parents introduced me to my love of bruchetta. My taste buds would do flips for the crusty bread and tomato and basil topping. For me, this can be a stand alone dish for a light lunch, or served up with grilled chicken for a summer time dinner. That being said, it's so easy to make and includes some of my favorite summer time flavors.

CABRILLO NATIONAL MONUMENT

Last weekend in San Diego was almost a fluke-- we had rain and really cold wind making for a somewhat "cold" day. Derek and I decided to trek out to Cabrillo National Monument for a few hours in the morning and fell in love. It honestly might be one of my new favorite places in San Diego. The picturesque park is set against the staggering cliffs of the Pacific with one of the last standing lighthouses along the West coast. (The lighthouse is under construction currently, but we can't wait to go back and hike the winding staircase to the top!) We were in for even more of a treat when we found out the old WWII bunkers used for spotting Japanese aircraft and boats were open to the public to tour. We climbed down what seemed the oldest ladder into a bunker with the most gorgeous view I had ever seen. After, we ventured to the tide pools for a little exploring and critter watching. It's amazing what treasures you can find in your city when you get out and explore. I think it is safe to say, Cabrillo completely stole my heart.
